Papas a la Huancayina can be translated as potatoes done by women from Huancayo, Peru
Potatoes (boiled — with or without skins — with has more vitamins)
1 can Carnation Milk (Heavy Cream or just Milk can substitute in equal amts.)
3/4 of a row of soda crackers
2 tablespoons oil (this is not absolutely necessary)
1 small plastic container of cottage cheese or Queso Fresca (fresh cheese) if you find it
1 or 2 or 15 (Yeah!!) red hot peppers deveined, deseeded and cut up fine
Salt and Pepper to taste
A blender (absolutely essentiallissimo)
Boil the potatoes. Soak the crackers in the milk until soggy.
Put the cottage cheese in the blender as well as the peppers and the soggy crackers and you might as well add the oil too, and blend away! Check the sauce and if it's very watery add one of the boiled potatoes to thicken it. The sauce should be yellowish to orangish depending on your pepper colour.
Cut the potatoes in half and arrange them on a plate with their flat side is down so they don't migrate to the table. Pour the sauce over the potatoes so that they're covered!
Garnish with slices of boiled egg and/or parsley!

This will serve a whole family (4-5) or serve as appetizers at a party if you include one potato per person.
